As much as we have an excuse this year to not fulfil our new year’s resolutions, Veganuary is the perfect time to try something new for your taste buds! So, whether you are looking to try out new food, are being a little bit healthier, or have been wanting to go vegan for a while, we have put together some easy vegan recipes for you to prepare in your studio flat.
Smokey Snack Cauliflower
Smokey Snack Cauliflower is a great one if you need something to keep you going that’s healthy, tasty, and low effort. All you need is: 1 large cauliflower head, 1 tbsp of virgin olive oil, 2 tsp of smoked paprika, and salt!
- Preheat oven to 200 degrees C
- Pull off the leaves of your cauliflower and cut off the lower stem
- Cut the head into four quarters and then 6 – 8 pieces. Try and get as many flat surfaces as possible as they will caramelise the best!
- Place the florets on baking paper or tinfoil within your tray and drizzle with olive oil
- Sprinkle smoked paprika and salt evenly across the cauliflower, be generous!
- Place your tray in the oven for 20 minutes, but keep a close eye they’re not burning, we want a nice brown not burnt. When your cauliflower is ready, you’ll be able to easily pierce it with a fork.
- Take them out and you are all done! This is great for co living spaces as you can cook it quickly and share a snack with friends.
Green Thai Curry
If you are looking for a bit of mild spice or an alternative to a takeaway, this vegan green Thai curry recipe is perfect for you. You will need: 225g of Tofu (smoked works best), 2 tsp vegetable oil, 50g Thai green curry paste, 400g coconut milk, 150g of snap peas, 175g halved baby sweetcorn, 150g halved green beans, 1 lime, coriander leaves, and finally jasmine rice!
- Put 480ml water into a pan with your jasmine rice and a pinch of salt, bring it to the boil and let it simmer for 10 minutes. Take the heat off for another 10 minutes and fluff when ready.
- Toss the tofu cubes with oil in a bowl, cut them up if they’re not already cubed. Cook in a frying pan for 1-2 minutes on each side until crisp then remove from the pan.
- Add curry paste and coconut milk to your pan and let it simmer for 5 minutes. Throw your tofu back into the pan with your sweetcorn, snap peas and green beans for another 5 minutes.
- Add lime juice and coriander into your curry and serve with rice!
After all that healthy vegan food it’s important to give yourself something sweet. These are perfect to eat while you get cosy and watch a film or zoom your friends in your studio flat. You will need: 96g cocoa powder, 96g baking powder, ¼ tsp salt, 128g chocolate chips, 82g non-dairy milk (we recommend almond for that extra nutty taste), 3tsps vanilla extract, 128g flour, ¼ tsp salt, 113g of melted vegan butter, and 64g sugar.
- Preheat your oven to 180 degrees C, line your baking tray with greaseproof paper and rub some butter onto the paper.
- Whisk your melted butter and sugar together, add in your milk and vanilla extract and mix. Mix your dry ingredients in a separate bowl (not the chocolate chips). Once done add to your butter and sugar mixture.
- Fold in your chocolate chips and spread the mixture evenly onto your baking pan.
- Bake for 25-30 minutes, keep checking occasionally to see if your fork comes out without batter on it.
- Once they are done keep them in the pan for 30 minutes or so to cool down before cutting and eating!
With all these ingredients make sure you check the packets to ensure they’re vegan before you buy them, there are a lot of excellent ingredient substitutes out there that you may not even know about!
